I filter on the To field, which mostly works:

Matches: to:(r-help@stat.math.ethz.ch)
Do this: Skip Inbox, Apply label "r-help"

Matches: to:(r-help@r-project.org)
Do this: Skip Inbox, Apply label "r-help"
